All chocolate is made from the seeds of the fruit of the Cacao tree. The word 'cacao' translates as ‘food of the gods’. Cacao beans were first domesticated by the Mayans over 2,000 years ago and are now known to be one of the most nutritionally complex foods on Earth, containing over 300 chemically identifiable compounds!!

Cacao has now been identified as the highest antioxidant food in the world with an ORAC score of 95,500 per 100 grams (goji berries have 23,500 and blueberries have 2,500!)!! The antioxidants in cacao beans are also highly stable and easily available to human metabolism making it a wonderful immune booster and treatment option for the spectrum of human diseases.

Raw Chocolate is an incredible food for wellbeing! It is wonderful for balancing brain chemistry, is a natural aphrodisiac and elevates your mood and energy. It is a great source of serotonin, dopamine, anandamide (“bliss" neurochemical) and phenylethylamine (PEA) which are all neurotransmitters associated with feelings of wellbeing and used for alleviating depression. Cacao also contains MAO inhibitors which keep these wellbeing neurotransmitters in our system for longer!

It is also the number one source of magnesium – which assists in brain functioning, heart heath and bone strength, and aids in stress reduction as well as muscle relaxation. Our cacao beans come from the native-born heirloom Ecuadorian species named Arriba Nacional-Fino de Aroma. This variety of Cacao is considered worldwide to have the finest floral aroma and flavor profile, as well as the highest amount of bioavailable nutrients and minerals. 

The farmers and Co-ops in Ecuador that our supplier works closely with employ meticulous organic farming methods, advanced sustainable technology, and the practical knowledge of Old and New World chocolatiers to present the finest cacao products. Organic chocolate quality starts with healthy soil and exclusive use of the Arriba Nacional variety, never the hybridized CCN51. These farmers nurture the trees, hand pick the cacao pods, and separate the beans for fermenting. After a carefully controlled fermentation process, the cacao beans are sun dried. Unfortunately, many companies have been known to dry their beans in ovens in order to reduce their costs. After this detrimental process, you end up with beans that incur a disappointing "acrid flavor" and significant loss of nutrients. Our raw cacao beans are hand peeled & crushed never machine processed.
